Ever wondered what to do with jicama? Or what it is? Jicama is a crunchy vegetable high in vitamin C and fiber, with a taste that falls somewhere between an apple and a water chestnut. Jicama is a great compliment to mango, especially when it’s tossed with fresh herbs, chili powder and a splash of lime juice.
Time-saving tip: Purchase precut mango. Use bottled lime juice instead of juicing fresh limes. You can make this salad up to three days in advance and store it in the refrigerator.
Makes about 5 servings (1 cup per serving)
Ingredients
1 large jicama, peeled and cut into 1/2-inch cubes
3 ripe mangos, peeled, cored and cut into 1/2-inch cubes
3/4 cup fresh lime juice
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped fresh chives
1 1/2 teaspoons chili powder
Salt to taste
